Deliciously Ella’s Fizzy Truffles Recipe

Inspired by some truffles I was sent and loved so much that I spent days trying to recreate them! They’re similar to the chocolate energy bites from my blog that are so popular, but these are much creamier and softer in the middle, with chunks of crunchy nuts and a layer of baobab powder on the outside which is what gives them a great fizzy taste. Baobab is the most amazing source of vitamin C too, so these truffles are just what you need when you’re feeling run-down.

Makes 15-20

Ingredients
500g medjool dates
200g almonds
4 tablespoons coconut oil
4 tablespoons raw cacao powder
2 tablespoons almond butter
5 tablespoons baobab powder

Method
Place everything, except the baobab, in a food processor and blend until it has stuck together but the nuts are still in chunks.

Place the baobab powder in a bowl.

Scoop 1 tablespoon of the truffle mix and roll it into a ball, then roll it in the baobab powder so it’s coated and no longer sticky. Repeat to coat all the balls.

Place in the fridge for a few hours to set, then serve.

Tweak it
If the fizzy bit isn’t for you, or you don’t have any baobab, then try rolling the truffles in more raw cacao powder instead, for an extra-chocolatey bite.
